July is a busy month for Raspberry Cream bonbons. We have been packing them in the shop and getting boxes ready for customers who want something fruity alongside their chocolate.
Raspberry Cream is one of our handmade opera cream centers, flavored with natural raspberry. The raspberry has a real tartness to it, which keeps the center from tasting like plain sugar. It works especially well with dark chocolate, though we make these in milk chocolate too.
The shell gives you a clean snap first. Then the center softens quickly, bringing the raspberry forward before the chocolate comes back at the end. It is a small piece, but the fruit and chocolate do not get lost in each other.
