We have been making chocolate by hand in Ferndale since 1976. The shop has changed in some ways over the years, but the work still comes down to the same things: good ingredients, careful temperatures, and paying attention to the batch in front of us.
This blog is where we will share what goes on behind the counter. Some posts will be about the chocolates themselves, including new flavors and the seasonal pieces that come and go. Some will be about the work, from tempering chocolate to packing boxes for the mail.
Ferndale is part of all of it. The weather affects the kitchen, the seasons affect what people are looking for, and the people who come through the door give the shop its rhythm. We will share some of those stories here too.
