Every so often someone leans over the case, points at the fudge, and asks how we keep it smooth. It is a fair question, because anybody who has tried making fudge at home knows it does not always cooperate. One batch turns out silky and the next one goes gritty by morning. The difference is not luck. It is sugar crystals.
Fudge is a crystalline candy, which sounds like a chemistry lecture until you realize that one word explains everything. The whole texture comes down to how the sugar in the pot decides to form crystals. If the sugar makes a few large crystals, you get a grainy, crunchy mess. If it makes millions of tiny crystals, you get the dense, smooth, melting texture it is supposed to have. Candy makers get there by cooking the mixture hot, letting it cool a little, and then stirring so the crystals all form at once. Since they appear together, they compete for the same dissolved sugar, and none of them gets a chance to grow big. The Exploratorium in San Francisco has a page about candy chemistry that puts it plainly: the more you stir, the more crystal seeds you get, and lots of tiny seeds beat a few giants every time.
The other half of the trick is the cream. We make our fudge with fresh cream from Humboldt Creamery, the dairy cooperative whose farm families milk cows all around us here in the valley. The butterfat in that cream gets in the way of the sugar crystals, which keeps them from clumping up into gritty grains, and the milk solids carry a round, milky flavor you only get from real dairy. That is also why fudge made from melted chocolate and canned milk in the microwave is a different animal. It can taste sweet enough, but it does not have the structure that makes the real thing what it is.
There is a good story behind all of this. Fudge showed up in this country sometime in the 1800s, and the version most people tell starts on American college campuses, where students at women's schools like Vassar cooked it up in their dorm rooms and traded the recipe around. That is where it picked up its reputation as a homemade candy, and it is a fitting origin for something that still feels like a kitchen project no matter who makes it.
Ours is a simple fudge, made the plain way with cream, sugar, and good chocolate, or with walnuts folded in when you want a little crunch. Nothing about it is complicated, but the texture is the payoff for paying attention to the details. Next time it melts in your mouth instead of crunching, you will know why: it is not magic, just a lot of very small crystals doing exactly what they are supposed to do.
