Our Buttermilk Patty is a larger version of the same old family recipe we use for our Buttermilk Cream bonbons. The smooth cream center is flavored with sherry and has a subtle tang that really does taste a little like buttermilk, even though there is no buttermilk in the recipe.

The recipe comes from a family candy-making book dating to the 1800s. We form the finished cream into a generous patty and dip it in Guittard milk or dark chocolate.
