Caramels
Our caramel is made from an old family recipe preserved in a candy-making book dating to the 1800s. We still make it the way the recipe was written, with sugar, glucose, local cream, and butter cooked in a copper kettle.
When the caramel reaches the right temperature, we pour it onto our marble slab and let it rest overnight before cutting it by hand. Some pieces are wrapped as plain caramels, while others are dipped in Guittard chocolate or used in candies like our Turtles and Moo Bars.
It's a simple recipe that has lasted for generations, and we don't see any reason to change it.
